On 23 August we had a fabulous fermentation workshop. To start with Racheal showed us how to make kombucha - a fermented tea. I know the scobie looks revolting but the drink was quite refreshing. Well worth trying and thanks to Racheal for giving us each a piece of scobie we should all be able to brew our own. |
Then Lynda took us through the steps of making sauerkraut. Lynda had five different types of sauerkraut that she had made for us to taste which was really interesting to see the different combinations. Once again seeing how it is done makes is so much more achieveable. Basically we needed to cut up all our vegetables, add some salt and then massage the vegetables until they release a quantity of liquid. Then bottle it and put a lid of cabbage to keep the cut vegetables under the liquid. Then we have to wait three weeks before we can eat it. It does bubble up in the bottles so it is best to release the pressure in the bottles everyday or keep the lids slightly ajar but liquid will dribble out.
