¼ cup of pine nuts
1 ½ cups fresh basil leaves
2 small garlic cloves, halved
½ cup shredded parmesan
7 tbs olive oil (add more if needed)
1. Toast pine nuts in a frying pan until lightly golden.
2. Place pine nuts, basil, garlic, oil and parmesan in the bowl of a food processor until finely chopped.
Basil Pesto is delicious simply stirred through pasta, with a few extra pine nuts and a sprinkle of parmesan cheese. Also if you cook some chicken, stir through a tablespoon or so of pesto and then add cream, that is scrumptious over pasta as well.
